PostHeaderIcon Recipe: Creamy Swiss Chicken

I have been trying out A LOT of new recipes lately. I am going to share ones that I think are very simple and delicious with you! I made this one the other night and the boys, normally picky like their mother, LOVED IT! I consider it a score for me! I am a big chicken eater and this is definitely on my top 5 chicken recipes. If you try this one, please come back and tell me what you thought!

Ingredients:

8 boneless, skinless chicken breast halves
8 slices Swiss Cheese
1 (10.5 oz) can Cream of Chicken Soup
1/2 cup Dry White Wine
1 cup dry, seasoned stuffing mix or croutons, crushed
4 tbsp Butter, melted

Directions:

Preheat oven 350 and Grease a 9×13 casserole dish.
1. Place chicken in prepared dish and cover with cheese. I just sliced the cheese in half and used an entire slice on each piece of chicken. I also only made 6 pieces since there is only 3 of us. Recipe was still fine.

If you are sitting there telling yourself, “I wish I could bake stuff like that.”, you can! This is probably the easiest Zucchini Bread recipe I have made. Everything goes into one bowl, mix and bake! As long as you set a timer, you are good to go on baking this. You can always half the recipe and try a smaller batch if you think you can’t do it. YOU CAN! I do not like zucchini but I could eat this bread all day long. I know it’s not the healthiest way to eat my vegetables but, it’s better than not I suppose? I have also been toying with the amount of sugar. The original recipe called for 2 cups. I have gotten it down to 1 2/3 so far. It still tastes just as delicious.

PostHeaderIcon If only all dinners were quick and easy

FamilyFinest-Logo-HighRes (1)Something that the boys really love to do is, make their own pizza. I must admit, I really enjoy it myself. Just don’t tell them ok? They think I do it for them only. Because we all have such different likes, it makes pizza night cheaper and there is a lot less arguing. I am not a vegetable eater. The kids are so, I don’t want that stuff on my pizza.

If I don’t have the time to go out and buy, sort and plate all of the ingredients for them, I will pick up some of the ready to go pizza kits. Yesterday was one of those nights. Since they have karate at 4:30, dinner is often something quick and simple. Sometimes it’s pizza, sometimes its soup and sammies. There just isn’t enough time to get them from school, get home work done and eat dinner before they leave. They isually grab a snack after school and then we eat after karate. the usual 5:00 dinners are pushed to 6. read the rest of this entry »

I spent most of Spencer’s kindergarten year in the classroom. I would help the teacher out with whatever she needed. During 2nd grade, I bonded with his teacher over our love for Pinterest. I helped her with many food related projects because, as she put it, “You’re way better at that stuff than I am”. She honestly was amazing! We did find it a task to find thngs to make, with the kids, that wouldnt end up being confusing or a total disaster.

I decided to put together a list of things that would be fun, and seem fairly easy, for teachers to make with their students.
