Easy Mashed Potato Pancakes - DelightfulChaos.com #RecipeI am a little late getting this Potato Pancake recipe post up. When I posted my photo to Instagram, it should have gone up the next day. Sadly, I became sick and did not do much else other than sleep. I apologize for making you wait but trust me, it was worth it!

Leftovers are not usually a thing in our home. I already seem to cook for an army of boys and they don’t leave anything behind. I always seem to make way more mashed potatoes than I need, for 6 people. While I am not a big fan of regular pancakes, I love potato pancakes but, I have never tried to make them before. Wait, probably because there are never any left over. Well, I lucked out. The boys graciously left me a ton so, my attempt at it was born.

I am so glad that I decided to go ahead and do these. They are absolutely delicious. The chives are an amazing flavor in these. If you love baked potatoes, you will love these Potato Pancakes. It is a quick and easy breakfast to throw together. I don’t recommend making these in advance. They are best served fresh and slightly crispy. If left in the fridge over night, they lose the crisp. If you don’t mind that, by all means, cook ahead!

The kids can definitely get involved making these too. Royal loves to flip the breakfast. Whether it’s pancakes or french toast, he always gets in there and wants to do it. Hopefully he will grow up to have the same love for cooking, and baking, as I do.

One thing that I truly love to do is cook. If I had some one to clean up after wards I might never leave my kitchen! I always love trying new recipes. Because I am an extremely picky eater, I tend to play with easier recipes that I know I can change if I need to. Some of the Quick things  you can do with  Original Seasoned Rice Vinegar is

* Use as a tangy base for tomato-based barbecue sauces.

Since I am a big potato addict, I choose to try the Tangy Pan-Fried Potatoes. I received the  Original Seasoned Vinegar and this recipe calls for the Roasted Garlic Vinegar or Original. I would love to try it with the other variety but it was delicious with the Original kind!

INGREDIENTS
3 lbs. russet potatoes
1 small onion, chopped
2 cloves garlic, minced (optional)
3 jalapenos, seeded and minced
2 1/2 tsp. ground cumin
1 tsp. each ground coriander and salt
3 Tbsp. butter
1/3 cup NAKANO Seasoned Rice Vinegar Roasted Garlic or Original
3 Tbsp. water
DIRECTIONS
Peel potatoes and cut into 1/2 inch cubes. Place in a large bowl; toss with onion, garlic, jalapenos, cumin, coriander and salt. Melt butter in a large skillet. (Use two pans, if needed, dividing butter and potatoes between pans.) Cook potatoes over medium to high heat 10 to 12 minutes, stirring frequently and scraping browned bits from pan. Add rice vinegar and water. Continue to cook until all liquid is evaporated and potatoes are tender, 6 to 8 minutes. Serves 6 to 8. Tip: For a hearty main dish hash, add leftover chopped cooked chicken, pork or beef to the skillet during the last 2 minutes of cooking.

PostHeaderIcon Recipe: Easy Foolproof Meatballs from Betty Crocker

Total Time: 40 Minutes

1 lb lean (at least 80%) ground beef
1/2 cup Italian-style bread crumbs
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
1 small onion, finely chopped (1/4 cup)
1 egg
  1. Heat oven to 400°F. Line 13×9-inch pan with foil; spray with cooking spray.
  2. In large bowl, mix all ingredients. Shape mixture into 20 to 24 (1 1/2-inch) meatballs. Place 1 inch apart in pan.
  3. Bake uncovered 18 to 22 minutes or until no longer pink in center.
Variation
Turkey or Chicken Meatballs: Substitute 1 pound lean ground turkey or chicken for the ground beef. (If using ground chicken, decrease milk to 2 tablespoons.) Bake until no longer pink in center and thermometer inserted in center reads 165°F.
How-To
For evenly-sized meatballs that will cook in the same amount of time, pat meat mixture into a 6×4-inch square. Cut into 24 squares. Roll each square into a ball.
