In what household did you grow up in where dessert is mandatory after a meal? When I was a kid, dessert after dinner was a treat. If it wasn’t your birthday, or some other special occasion, you could forget it. Don’t even bother asking! However, times have changed and I try to be a little nicer than my parents were. Shhh, please don’t tell me Mom or I won’t get my birthday dessert this year!.

Besides trying to find time to make them something, I also have to hunt down recipes that are quick and won’t leave my kitchen looking like a flour bomb went off on the counter. Yes, I like to make a mess when I bake. It just seems like more fun to have to spend an hour cleaning up after it’s all done. Doesn’t it?

So, on the hunt for something that would still get me to bed on time and they could enjoy the next day. If you are not much of a baker, don’t worry, a monkey could make this coffee cake! OOO OOO AHH AHH! See, I told you so.

Now let me tell you about this amazing coffee cake recipe. First, I am a big fan of coffee cake but, I have never made it before. I look at it this way, even if its unhealthy, it still healthier than something bought in the grocery store. I made it last night and it was a success. Everyone enjoyed it. Give this coffee cake recipe a try! I hope you love it as much as we did.

Ingredients

Instructions
  1. Preheat oven to 375.
  2. Grease a 9x13 pan, well. Trust me, you do not want this baby to stick.
  3. Beat together white sugar, butter and eggs until light and creamy.
  4. Blend in milk and vanilla. Don't worry if it looks curdled.
  5. Stir in the self rising flour until fully incorporated.
  6. In a seperate bowl, mix together the brown sugar and cinnamon.
  7. Layer #1 Spread half of your batter into your pan. Don't worry about it being perfectly flat. Just make sure it's covering the entire bottom.
  8. Layer #2 Sprinkle half of your cinnamon/brown sugar mixture over the batter you have put in the pan.
  9. Layer #3 Spread the other half of your batter on top. I used my fingers because it was difficult with a spatula. It kept pulling up layer #2. You really can't mess this up. Even if it looks messed up, it'll still taste delicious.
  10. Layer #4 Top with the remaining brown sugar/cinnamon mixture.
  11. Bake for 30-35 minutes. I have a gas oven and mine took 30 minutes.
  12. Allow to cool at least 5 minutes before cutting.
Recipe Notes

Make sure that your butter and eggs are room temperature. You will have a mess if they are cold. I learned this the hard way many years ago. You can cut this recipe in half for a 9x9x2 pan.
