I have been trying out A LOT of new recipes lately. I am going to share ones that I think are very simple and delicious with you! I made this one the other night and the boys, normally picky like their mother, LOVED IT! I consider it a score for me! I am a big chicken eater and this is definitely on my top 5 chicken recipes. 8 boneless, skinless chicken breast halves
8 slices Swiss Cheese
1 (10.5 oz) can Cream of Chicken Soup
1/2 cup Dry White Wine
1 cup dry, seasoned stuffing mix or croutons, crushed
4 tbsp Butter, melted
Preheat oven 350 and Grease a 9×13 casserole dish.
1. Place chicken in prepared dish and cover with cheese. I just sliced the cheese in half and used an entire slice on each piece of chicken. I also only made 6 pieces since there is only 3 of us. Recipe was still fine.

My fiancee has this habit of posting things on my Facebook that he wants for dinner. Sometimes he finds them online and sometimes it is a weird concoction of things he thinks will work together. Don’t tell him but. I always change it because, well, I am just a better cook.
Tonight he requested a weird version of a Mexican Chimichanga. While it’s not what I would call an authentic Chimichanga, they are still pretty tasty! I was making enough for 6 people so you can cut this recipe in half for a smaller portion. This recipe made 16 of them. The nice thing about this recipe is that it is versatile! You can mis cheeses, use two of the same and even pick a mild or hot taco mix. read the rest of this entry »
While on Twitter one day, I saw a tweet by a local sweetheart, Rebecca Regnier. It was a recipe for Philly Chicken Puffs. (Make sure you check out her video, she is so funny!) I knew I wanted to make these because who doesn’t love cheese and chicken? It was a fast and easy finger food that the boys would love. My version is only slightly different so check them both out!
This isn’t something that I would normally indulge in but, I have been trying to move outside my comfort zone when it comes to food. I am an extremely picky eater and it can sometimes be a hassle. I stepped out of my box and jumped over it on this one! The only part I couldn’t bring myself to eat was the olives. That will be one thing that I don’t think I will ever have a taste for.
