You know those days when you just don’t want to spend hours in the kitchen cooking dinner? Today was one of those days. I was on the hunt for an easy and fast recipe. We were graced with about a foot of snow, which I love but, the shoveling and playing have me pooped out. I think I am getting too old to spend 3 hours playing in the snow. Maybe? NAH!
I stood in front of the pantry, saw the chili and thought, “Hmm, let’s give it a try.” I am sure it’s been done somewhere before but, it’s new to me. Most things that I make stem from, let’s see what we can throw together today. I actually use my blog as a recipe book of sorts. Once I make it, I post it. Usually later on, I will write it in my book if it was a hit with everyone.
I am not a fan of beans but, this was what I had because it was on sale. You can really use either kind. You can use any brands that you like, I listed what I used. This is easy to assemble. You simply layer the ingredients on, as I have laid out below, and pop it in the oven!
Growing up in Texas, there are some things you learn at a young age: which snakes are poisonous, what to do in case of a tornado, and that canned chili is like salsa from New York City – it’s just not done! With this thought in mind, you can imagine how my family reacted when I told them I was using Wolf Brand Chili instead of homemade for the first Frito Pie of Fall. For those who don’t know Frito Pie, it’s pretty much like it sounds: a base of corn chips and chili with whatever toppings sound good that day. We generally stick with the basics of onions, cheese and sour cream, but have been known to add salsa, corn, or anything else that happens to be in the refrigerator.
