I have been trying out A LOT of new recipes lately. I am going to share ones that I think are very simple and delicious with you! I made this one the other night and the boys, normally picky like their mother, LOVED IT! I consider it a score for me! I am a big chicken eater and this is definitely on my top 5 chicken recipes. 8 boneless, skinless chicken breast halves
8 slices Swiss Cheese
1 (10.5 oz) can Cream of Chicken Soup
1/2 cup Dry White Wine
1 cup dry, seasoned stuffing mix or croutons, crushed
4 tbsp Butter, melted
Preheat oven 350 and Grease a 9×13 casserole dish.
1. Place chicken in prepared dish and cover with cheese. I just sliced the cheese in half and used an entire slice on each piece of chicken. I also only made 6 pieces since there is only 3 of us. Recipe was still fine.

Beef Tomato Macaroni
- 1 (28 oz) can Dei Fratelli Whole Tomatoes
- 1 lb Ground beef
- 1 large Onion, chopped
- 1 Green pepper, chopped
- 1 Cup Water reserved from macaroni water
- 2 tsp Salt
- 1 tsp Oregano
- 1/4 Cup Butter
- 8 oz Elbow macaroni

My fiancee has this habit of posting things on my Facebook that he wants for dinner. Sometimes he finds them online and sometimes it is a weird concoction of things he thinks will work together. Don’t tell him but. I always change it because, well, I am just a better cook.
Tonight he requested a weird version of a Mexican Chimichanga. While it’s not what I would call an authentic Chimichanga, they are still pretty tasty! I was making enough for 6 people so you can cut this recipe in half for a smaller portion. This recipe made 16 of them. The nice thing about this recipe is that it is versatile! I was shocked to find out that so many people I know have switched from pork bacon to turkey bacon. I am without a doubt a huge bacon lover so even getting myself to try it was a big ordeal. You can of course taste the difference but it’s really not bad! The boys have actually come to like it too. What I like about it most is knowing there is not all that grease in the pan when it’s done cooking. I know, I know, that’s the best part right?
I am certain this is not an original idea but it was one of those, open the fridge, look in and grab, dinner moments. Really simple and really delicious. I am a big fan of Applegate Naturals bacon for a number of reasons.
