I am always on the hunt for super fast things to make on the kid’s baseball game nights. As if having 4 sons isn’t crazy enough, add two sons that play baseball. This quite often makes for a tad of chaos when it comes to dinner time. I will admit, I am not the most organized person, but I am really trying. I am stepping up my game this year because quite frankly, the stress is just getting old. Like me!

Enter Keystone All-Natural Beef! I normally try not to use too much “canned food”, but Keystone is premium USDA beef that is hand-packed into a convenient can to make your recipe easier. Their all-natural beef has only two ingredients: beef and sea salt. Perfect for quick meals like stew, stir-fry and more! I also was very pleased when I checked out the label. Since Ales is a Type 1 Diabetic, I looked for the carb count. ZERO! Many “processed” types of meat have carbs. *thumbs up* for Natural and carb free!

This meal couldn’t have been any easier. The rice is actually what made it take longer. You could use premade mashed potatoes instead and that would cut the time down to probably 10 minutes. You can really add anything that you want to this. I am not a huge vegetable fan, so I kept it minimal. PostHeaderIcon #Recipe: Fast, Easy and Kid Friendly Lasagna Roll-Ups

I absolutely love lasagna! Some days I just don’t have the 3 hours it takes me to make it. Yes, it is taken very seriously in my home! I came up with this easy way to still get my lasagna fix without spending all that time in the kitchen. I am sure some genius woman has done this in the past but, I wish I had known about it much sooner!

All you have to do is cook your lasagna pasta as indicated on the box. Spread some Ricotta cheese on it, add some sauce and mozzarella. You can also sprinkle some cooked ground beef or sausage on it as well if you like. Roll it up, put a little sauce in the bottom of your baking dish so they don’t stick and spoon a little sauce over the top of each one. Sprinkle with mozzarella cheese and bake at 325 for about 30 minutes. Since every thing is already cooked, you really only are wanting to melt the cheese and warm it up. Be sure you let them sit at least 5 minutes after removing them from the oven. If you try to eat them right away, they will completely fall apart when you try to cut them. These are also good to make ahead and reheat for lunch.
