Camping is easily the favorite way to spend the weekend, for many of us. Not just for the adventure that it offers but, also for the fun treats that one can enjoy by the camp fire. Many of us relate camping, mainly, to the amazing grilled goodies that can be cooked, the easy to make sandwiches and other recipes that can be tried. Sitting by the fire and cooking a meal, is surely a rewarding experience, especially after the tiresome day out at trekking. Well, if you are headed to a camping adventure anytime soon, you must have a few easy recipes up your sleeve to add some more fun to the whole experience.

Being a mom of these crazy boys, I am always looking for fast, simple and cheap lunch recipes. Snacks are a big deal for us. I also like to find a way to use up any left overs from the night before. I am usually pretty good at coming up with new things for dinner but, sometimes I just run out of ideas, or don’t have a lot of time.
Here are a few ideas for you.
Tortilla Roll Ups – Spread cream cheese and a couple slices of deli meat onto a flour tortilla… roll it up and eat! I like mine with honey ham. You can eat it burrito style or slice it up into pinwheels.
Vanilla Fruit Salad – Very easy! Fill a salad bowl with large squares of fresh fruit. Whatever kind you like or what is on sale! Pour a carton of Vanilla Yogurt (it has to be vanilla flavored!) over the fruit for a sauce. That’s it!
Traditional Pudding Pops – Prepare a box of instant pudding just like it says on the box. Pour it into popcycle molds and pop it in the freezer. We like Chocolate best but, there are so many kinds of pudding available so, have fun with it! The cheesecake was delicious also!
A few years ago, I decided I needed to learn to make my own icing and frosting. Those prepackaged frosting tubs are just loaded with bad stuff. Yes, I use them too , on occasion but, nothing beats a home made frosting. I can sit with one of the store bought ones and eat it with a spoon. Yes, I know but it’s oh so good and full of sugar This is one of my favorite recipes and it is an easy frosting to make! I hope you enjoy it as well.
- (2) 8 oz. blocks Philadelphia Cream Cheese, softened
- 2 cups Powdered Sugar (Slowly add 1 additional cup to taste/texture if needed)
- 1 tsp Pure vanilla extract
- 2 shakes of McCormick Saigon Cinnamon
(This recipe makes enough to cover one single layer cake. For a Double layer double ingredients)
Combine all ingredients and whip on low until peaks form and ingredients is thoroughly combined. If you make the Duncan Hines Carrot Cake, this is a fast and simple icing to throw on top
