Being a mom of these crazy boys, I am always looking for fast, simple and cheap lunch recipes. Snacks are a big deal for us. I also like to find a way to use up any left overs from the night before. I am usually pretty good at coming up with new things for dinner but, sometimes I just run out of ideas, or don’t have a lot of time.
Here are a few ideas for you.
Tortilla Roll Ups – Spread cream cheese and a couple slices of deli meat onto a flour tortilla… roll it up and eat! I like mine with honey ham. You can eat it burrito style or slice it up into pinwheels.
Vanilla Fruit Salad – Very easy! Fill a salad bowl with large squares of fresh fruit. Whatever kind you like or what is on sale! Pour a carton of Vanilla Yogurt (it has to be vanilla flavored!) over the fruit for a sauce. That’s it!
Traditional Pudding Pops – Prepare a box of instant pudding just like it says on the box. Pour it into popcycle molds and pop it in the freezer. We like Chocolate best but, there are so many kinds of pudding available so, have fun with it! The cheesecake was delicious also!
While on Twitter one day, I saw a tweet by a local sweetheart, Rebecca Regnier. It was a recipe for Philly Chicken Puffs. (Make sure you check out her video, she is so funny!) I knew I wanted to make these because who doesn’t love cheese and chicken? It was a fast and easy finger food that the boys would love. My version is only slightly different so check them both out!

Has anyone seen the summer? I am not sure where it went but I wasn’t quite done with it. For some reason, this summer seemed to just whiz on by. We didn’t get to do half of the things that we wanted to do it seems. I am happy to say that Spencer can now ride a bike without training wheels. I think that was the highlight of his summer. He picked in up in less than 10 minutes. I was so proud of him and so was his big brother.
The boys start school on August 27th. They are starting a new school this year so there was so much to do, yet to get done and unknowns. I guess all parents have the same fears about things like that. Will they like the kids? Will they like the teachers? Will they make new friends easily? What will the lunches be like?

Do you snack? Don’t be silly, of course you do. I have to admit that cakes and pastries are my weakness. I am not a big fan of chips and candy really, although sometimes chocolate candy is a must. It’s always fun for the kids, and by kids I of course mean me, when a delicious treat arrives in the mail. The nation’s largest baking company, Bimbo Bakeries USA is bringing a new way to snack from Sara Lee. Sara Lee, an American icon is introducing a variety of pre-portioned delicious Snack Cakes to lunch boxes nationwide this August. Just in time for back-to-school, the new, baked fresh to go Snack Cakes make it easy to take along the quality and heritage of the Sara Lee brand to consumers on-the-go, for anytime snacking.
